Gina Lee’s Coconut “flan” or CRUSTLESS COCONUT CUSTARD PIE


2 cups milk (we use nonfat milk and it turns out amazing)
1 cup sugar (we use 1/2 cup)
4 eggs
1/2 cup self rising flour (to make self rising flour of this quantity, just add .5 teaspoon baking powder, and 1/8 teaspoon salt to regular flour, make sure to use aluminum-free baking powder like Rumford brand baking powder in the red can, available at all supermarkets)
1 stick butter/margarine, cut up (we use half a stick and use Earth Balance)
1 1/3 cup tender flake coconut (flakes)

how to make it:
– put all ingredients except for the coconut into a blender and mix for 2-3 minutes until mixed through.
– add coconut and blend for a few seconds
– pour into an ungreased 10″ pie plate
– bake at 350 for 40-45 minutes until golden on top
