Ann Lee’s Cottage Cheese Drops

1/2 c. Butter, softened
1/2 c. Brown sugar
1 c. Cottage cheese
1 Egg
1 tsp. Vanilla
1 1/4 c. Wheat flour
1/2 tsp. Baking soda
1/2 tsp. Baking powder
1 1/2 c. Oatmeal (whole, uncooked)
1/2 c. Carrots (shredded)
1/2 c. Zucchini (shredded)
1/2 c. Walnuts (chopped)

Beat butter and sugar. Add cheese, egg and vanilla and mix well. Sift together the wheat flour, baking soda and baking powder, then add the oatmeal. Stir in the dry ingredients into the wet mixture, then add the carrots, zucchini and walnuts. Drop by teaspoon on greased cookie sheet about 2 inches apart. Bake at 375 degrees for 15 minutes. Makes about 4 dozen cookies.

NOTE: I found that it might be easier to add the nuts, and veggies to the wet mix and then add the flour mixture next time. ALSO–adding chopped cranberrys might be a nice touch.
