Baked Ziti With Thick Rich Meat Sauce

3 1/3-4 cups pasta sauce with meat
2/3 lb ziti pasta or 2/3 lb penne pasta, under cooked by 4 minutes. It will finish when baked and it will absorb the liquid from the sauce.

Cheese Filling
2 cups ricotta cheese
1 1/3 cups shredded mozzarella cheese
1/4 cup grated parmesan cheese
2/3 egg, slightly mix
2/3 tablespoon dried parsley
1/3 teaspoon black pepper

2/3 cup mozzarella cheese, shredded
1/4 cup grated parmesan cheese

1-Prepare sauce and keep under a low flame.
2-Preheat oven to 350.
3-Mix the cheese mixture together.
4-Mix pasta with 1/3 – 1/2 of the cheese mixture till creamy and gooey.
5-Place 1 1/2 cups sauce in bottom of a 10×13 casserole dish.
6-Top with 1/2 of the pasta.
7-Spread the remaining cheese on the pasta.
8-Top with 2-3 cups of the meat sauce.
9-Top with remaining pasta; 1 cup sauce; 1 cup mozzarella; then top with grated cheese.
10-Bake for 30 minutes. Placing foil on the rack below to catch any spillage that may occur for this is packed with goodness.
11-Meanwhile let the sauce keep simmering to use if desired on top of the baked ziti.

Thick Rich Meat Sauce

3 lbs ground beef or 3 lbs ground turkey
2 cups diced onions
1 cup celery
1 cup bell pepper
1 large carrot, 1 cup diced
1 fresh jalapeno pepper, minced or red pepper flakes
4 garlic cloves, minced
4 ounces mushrooms, sliced
1/4 cup fresh oregano
1/4 cup fresh parsley
1 teaspoon fresh thyme
1/4 cup fresh basil, chopped
1 teaspoon garlic powder
1 teaspoon salt
1 teaspoon black pepper
105 ounces tomato sauce
6 ounces tomato paste

1-Heat a dry, large, heavy bottom pot add ground beef to brown mixing to separate cooking for 3 minutes.
2-Add onion, celery, peppers, carrots, and jalapeno cook for 5 minutes.
3-Add garlic, mushrooms, herbs and spices cook for 5 minutes.
4-Add the sauce and paste bring to a boil then reduce heat and let simmer for 1 hour or till thickness desired.
5-Before serving add some fresh herbs to bring freshness to the home made delish sauce.
